Quick, easy, crunchy ….. my chicken corn chips!
Easy to do ….. very good ….. taking them in hand to eat like chips
Ingredients for 4 people: 4 slices of chicken, 1 cup of low-fat plain yogurt, juice of a lemon, 100 grams of corn flour a fine type of corn flour, like “fioretto” type), salt
Lightly beat the chicken slices to make them quite thin and cut into pieces about 5 cm to the side. In a bowl, mix the yogurt with the lemon juice and pour over chicken pieces
Allow the chicken to infuse for at least an hour (or even better for longer hours in the refrigerator).
Breading the chicken with the corn flour without removing the excess of yogurt from the chicken (with the use of a fork dip the chicken pieces in flour and dab well, always with the fork, so that it remains a layer consisting of corn )
Brush with olive oil a baking sheet lined with parchment paper, place the chicken pieces and greaset them with oil in the surface, gently pat it with a brush. Bake at 180 degrees for about 20 minutes, turning them once ….. add salt after cooking ….. will be very crispy!
