From recipes of the Carthusians ….. to the White Well, prepared by beautiful zucchini clear display in a market stall with their fresh flowers and so beautiful that I would put in a vase in the middle of the table instead of in a baking dish ….. but try to understand me, the blog ‘was a stronger temptation ….. and I could not resist!
Here’s my tart and zucchini flowers to which I added turmeric ….. that by ‘a special flavor!
Ingredients: 250 gr wholemeal flour (type 2), 350 grams of zucchini clear, 6 zucchini flowers, 2 eggs, 50 grams of grated parmesan cheese, 50 g Emmental cheese into small cubes, 2 leeks, 3 tablespoons of extra virgin olive oil ‘oil, coffee 1cucchiaino of turmeric, salt, 2 tablespoons vegetable cream (soy, oats …..).
In a bowl beat the eggs with a fork: Use 2 tablespoons for the dough and the remaining quantity for the filling of the tart. Prepare the dough by mixing in a food processor the flour, a pinch of salt, 2 tablespoons of beaten eggs, 2 tablespoons of olive oil and adding flush water until it forms a ball. Wrap the dough in wax paper or a cloth and let it rest in a cool place at least half an hour. In the meantime, prepare the filling: grate the zucchini with a grater with large holes, put them in a large pan along with the finely sliced leeks in washers (white part only) and a tablespoon of olive oil. Leave flavor mixing for 5 minutes and continue cooking for another 5 or 10 minutes, adding a few tablespoons of water (about 2) and a little salt. At the end of the short cooking the zucchini should still be fairly dry. Allow to cool and add the grated parmesan cheese, diced Emmental, beaten eggs, turmeric and vegetable cream. Add a pinch of salt if necessary. Roll out the dough with a rolling pin in a thin layer leaving a part for the strips of surface decoration. Line a roasting pan (I used a 30x 21 cm) stuff with the zucchini mixture, decorate with strips of dough crossed and bake at 180 degrees for about 30 minutes. Adjust in every cao the cooking times on the basis of your furnace.
Serve warm …..
